Matzah Pancakes for Passover
Crispy on the outside, soft on the inside, and with a touch of cinnamon that makes them irresistible. Perfect for a special breakfast during Passover.

Ingredients:
- 1 cup matzah meal
- ¼ cup brown sugar
- 2 eggs
- 1 teaspoon cinnamon
- 1½ cups milk (can be plant-based or dairy, and a little more if the mixture needs it)
- Oil for frying
Preparation
- In a bowl, mix the matzah meal, sugar, eggs, and cinnamon.
- Gradually add the milk until you get a semi-thick mixture (similar to pancake batter). If the mixture thickens too much, add a little more milk.
- Heat a pan over medium heat with a little oil.
- Pour the mixture in small portions to form the pancakes.
- Cook for 40–60 seconds per side, or until golden.
- Remove from the pan and serve hot.
Tips
- You can serve them with honey, maple syrup, yogurt, or fresh fruit.
