Matzah fritters


Matzah Pancakes for Passover

Crispy on the outside, soft on the inside, and with a touch of cinnamon that makes them irresistible. Perfect for a special breakfast during Passover.

Ingredients:

 

 

 

 

 

 

  • 1 cup matzah meal
  • ¼ cup brown sugar
  • 2 eggs
  • 1 teaspoon cinnamon
  • 1½ cups milk (can be plant-based or dairy, and a little more if the mixture needs it)
  • Oil for frying

Preparation

 

 

 

 

 

  1. In a bowl, mix the matzah meal, sugar, eggs, and cinnamon.
  2. Gradually add the milk until you get a semi-thick mixture (similar to pancake batter). If the mixture thickens too much, add a little more milk.
  3. Heat a pan over medium heat with a little oil.
  4. Pour the mixture in small portions to form the pancakes.
  5. Cook for 40–60 seconds per side, or until golden.
  6. Remove from the pan and serve hot.

Tips

 

  • You can serve them with honey, maple syrup, yogurt, or fresh fruit.
