Lemon Marinated Salmon with Roasted Vegetables
There are recipes that become favorites because they are easy, look spectacular, and taste incredible. This lemon marinated salmon with roasted vegetables is exactly that: a complete dish, full of color and flavor, that practically cooks itself.
The salmon is marinated with olive oil, lemon, garlic, and spices, giving it a fresh and deep flavor. At the same time, the vegetables roast around the fish, absorbing some of the marinade and becoming tender, slightly caramelized, and full of flavor.
It's one of those perfect recipes for when you want to eat well, healthily, and without dirtying too many dishes.
Ingredients
1 large salmon fillet
Organic cherry tomatoes
Mini bell peppers (various colors)
Broccoli florets
Cauliflower florets
Snow peas
Asparagus
For the marinade
½ cup olive oil
¼ cup fresh lemon juice
2 tablespoons lemon pepper
1 tablespoon paprika
3 cloves garlic, minced
1 bunch fresh parsley, chopped
Salt and pepper to taste
Preparation
Preheat oven to 200°C (400°F).
In a bowl, mix the olive oil, lemon juice, lemon pepper, paprika, minced garlic, parsley, salt, and pepper. Stir well until all ingredients are combined.
Place the salmon fillet on a baking sheet and arrange the vegetables around it: cherry tomatoes, mini bell peppers, broccoli, cauliflower, snow peas, and asparagus.
Drizzle the salmon with the marinade and also add some over the vegetables so they absorb the flavor.
Bake for 18–22 minutes, depending on the thickness of the salmon, until the fish is flaky and the vegetables are slightly golden.
How to serve
Serve the salmon directly from the baking sheet with the roasted vegetables around it. You can finish with a little more fresh parsley or an extra squeeze of lemon to enhance the flavor.
