One of the easiest ways to ferment at home. You only need cucumbers, salt, water, and your favorite spices.
Spices I used:
• Garlic
• Dill
• Bay leaf
• Peppercorns
• Coriander seeds
• Mustard seeds
Step-by-step instructions:
1. Place the pickles in a clean jar, packed tightly.
2. Fill the jar with water until they are completely covered.
3. Weigh the jar with the pickles and water.
4. Calculate 2% salt of the total weight of the pickles + water.
5. Empty that water into another container, add the salt, and mix until completely dissolved.
6. Add garlic, dill, bay leaf, pepper, coriander seeds, and mustard seeds over the pickles.
7. Pour the brine over the cucumbers until completely covered.
8. Close the jar and let ferment at room temperature for 3–5 days, depending on how sour you like them.
9. When ready, store them in the refrigerator.
