Some ingredients seem simple… until you try them.


Preserved lemons are one of those kitchen secrets that completely transform a dish. Their flavor is intense, deep, and slightly salty, with an incredible citrus aroma that elevates everything it touches.


They are a classic ingredient in many Mediterranean and Middle Eastern cuisines, and once you have them in your fridge, you start adding them to everything: salads, fish, dressings, tahini, stews, and even sauces.


This version is inspired by the recipe from Adeena Sussman's book Sababa, a wonderful source of inspiration for those of us who love Mediterranean flavors.


Best of all, making them at home is incredibly easy.

 


 

 

Ingredients

 


6–7 yellow lemons

6 tablespoons sea salt

Filtered clean water (as needed to fully cover)

 


 

 

How to make preserved lemons

 


Wash the lemons thoroughly and cut them into quarters lengthwise, without separating them completely, leaving the base attached so they maintain their shape.


Place a little salt inside each lemon and press them lightly.


Arrange the lemons tightly packed inside a clean glass jar. The more compact they are, the better the preservation will work.


Add the rest of the salt to the jar and pour filtered clean water until the lemons are completely covered.


Close the jar and make sure the lemons are fully submerged.


Store them in the refrigerator and let them rest. Over time, the rind softens and the flavor becomes deeper and deeper.

The water must be clean and filtered, and the lemons must remain completely covered at all times for proper preservation.

 


 

 

How to use preserved lemons

 


Once ready, you can primarily use the rind, which is where the most intense flavor is.


Add it finely chopped to:

 

  • salads

  • tahini or dressings

  • baked fish

  • chicken or stews

  • Mediterranean sauces

 


A small piece is enough to give incredible depth to any dish.
